Ingredients

  • 3 tbsp olive oil
  • 1 lb boneless, skinless chicken thighs
  • 1 lb sweet Italian sausages
  • 1 cup diced onion
  • 1 cup red wine
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • 2 bay leaves
  • 1-½ tsp chili powder
  • 1 tbsp Italian herbs
  • 1 tbsp minced garlic
  • 3 tbsp Worcestershire sauce
  • 1 28oz can crushed tomatoes
  • 2 14oz cans cannellini beans
  • fresh parsley for garnish

Instructions

  1. In a Dutch oven (or heavy pot), heat the olive oil until hot. 
  2. Chop the chicken thighs and add them to the pot, searing on high heat for 2 minutes.
  3. Transfer the chicken to a plate. Then chop each sausage into 5 pieces and add to the pot with the diced onion. 
  4. Cook the sausage and onion for 3-4 minutes, and then add the red wine.
  5. Deglaze the pot by scraping off any burnt pieces that are stuck to the pot. 
  6. Add the chicken, spices, garlic, and Worcestershire sauce and stir well.
  7. Cook for 5 minutes over a low-medium heat. 
  8. Add the crushed tomatoes and beans, then bring to a simmer. 
  9. Turn the heat to medium-low and cover with a lid. Cook for an hour, stirring every so often. 
  10. Serve at once, garnished with chopped parsley and crusty bread.
