I've never really been an avid popsicle maker, but after making a few recipes recently I should have been on this train a while ago. Making popsicles is the easiest thing to make ever!
I used Silk's Blueberry Soy Fruit and Creamy as a thickener and sweetened it up with a dash of agave, you could also use honey if you like. The yogurt gives it a really creamy texture and the flavor from the coconut makes you think you should be swinging on a hammock somewhere in Hawaii, popsicle in hand.
I was torn between making popsicles or going completely the other way and making a Thai green curry. I think the coconut blend would be perfect and you'd have a lot less calories than regular coconut milk.
That's definitely on my list for next time.
