If you’re using a gas stove to sear your cod, have the flame at medium-high heat. For an electric stovetop, you’ll want it set to high. Then finish in a preheated oven at 425°F for 12-14 minutes.

Keep it simple. Cod tastes amazing with just sea salt, coarse black pepper, and a squirt of lemon after cooking. Adding fresh herbs is always a great way to kick things up as well.

To determine the readiness of the cod, gently press it with your finger; if it feels firm, it's ready, but if it’s still soft, it may need a few more minutes. When lightly pressed with a fork, the fish should effortlessly separate into beautiful white flakes.

  • 1 pound fresh cod, cut evenly into two pieces
  • 1 tbsp olive oil
  • Sea salt and black pepper
  • 2 tbsp canola oil 
  • Lemon 
  • 2 tbsp unsalted butter
  • Chopped parsley

  1. Preheat the oven to 400°F.
  2. Place both pieces of fish on a cutting board, and drizzle evenly with olive oil. 
  3. Season with salt and pepper. 
  4. Add the canola oil to a non-stick, oven-safe pan on high heat. 
  5. Once the oil is hot, place the cod into the pan, top side down. 
  6. Sear without moving for 3-4 minutes. 
  7. Carefully flip the cod and transfer the pan to the oven. 
  8. Bake for 12-14 minutes until the fish feels slightly firm when gently pressed with your finger. 
  9. Take the pan out of the oven and add the butter. 
  10. As the butter melts, begin to spoon it over the fish a few times. 
  11. Squeeze half of a lemon over the fish, and serve with a garnish of chopped parsley.
