Tasty Vegetarian Meatballs glazed in a warm apricot and balsamic sauce. Serve on mini skewers with fresh rosemary for a super easy holiday appetizer!
I love the holidays as much as everyone else – unless you’re the grinch – mainly because of the food! There’s always so many parties and get togethers to attend and everyone tends to give their kitchen efforts 100% more than normal. Maybe it’s the pressure to make sure your recipe is way better than your co-workers! Totally normal thing to think.
Well that’s where these easy Vegetarian Meatballs with an Apricot and Balsamic Glaze come in. You can have this dish ready to go in less than ten minutes and they’re guaranteed to be the first empty dish on the table.
These Smart Menu Veggie Meatballs from Lightlife are made from soy protein and I think your guests will be blown away by the flavor. With only five ingredients this appetizer is one that will bamboozle everyone as to how you could make them so tasty? All it takes is a jar of apricot preserves, some veggie stock, balsamic vinegar and fresh rosemary.
Don’t forget those meatballs though. Non-GMO, vegan and certified Kosher make them high in protein and low in calories. They’re made from plant proteins so if you’re skipping the protein from meat you can still get the same essential healthy boosts from these meatballs!
You can even make this appetizer in the slow cooker if you like the idea of having them ready while you take care of business, or just add all of the ingredients to a pan and bring to a simmer. Add the vegetarian meatballs and warm through. Spike them with fancy mini skewers and bam, everyone’s asking you for the recipe and amazed that the meatballs they just ate are actually vegetarian.
Serve them on the skewers or in bowl and let your party guests go at it!
