We are calling this recipe “Sausage Breakfast Casserole,” but do not be fooled by this title.  This is not just a breakfast dish.  The fluffy egg mixes so well with the hashbrowns and the crispy crust of the cheese and sausage. 

It is infinitely customizable and reheats amazingly well for several days after.

There are not many recipes that dirty three dishes from start to finish.  It starts with the skillet for browning the ground sausage.  Second, is the large bowl for all the ingredients to be combined. 

Finally, the baking dish.  Depending on the size of your baking dish, you honestly could get away with combining the ingredients in the baking dish and get this recipe down to two!  So simple and just so delicious.

Here are the ingredients you will need (see quantities below):

  • Egg Beaters Eggs - The foundation for any breakfast casserole
  • Frozen Shredded Hash Browns - Don’t forget to thaw them out!
  • Shredded Cheese - Lots of options…we use colby jack for this recipe
  • Cottage Cheese - Take your pick, but we use 1% fat
  • Green Onion - Slice them thick or thin, totally your call
  • Ground Sausage - We went with spicy, but you can go regular too
  • Salt/Pepper/Parsley - For taste
  • Bacon - Bacon should never be last on any list, but it’s just for the topping here

The Process

Prepare yourself for simplicity.  It’s almost too easy!

It all starts with thawing the frozen hash browns and browning the ground sausage.  

After that, gather all of your ingredients: Egg Beaters eggs, thawed shredded hash browns, shredded cheese, cottage cheese, sliced green onion, and cooked ground sausage.

Combine these ingredients in a large bowl (or if you want to save some dishwashing, place the ingredients in your baking dish and combine them there).

Bake it for 50 minutes, then top with your bacon bits and parsley and you have an amazing meal for any time of the day!

Ingredients

  • 1 1/4 cup Egg Beaters egg
  • 3 cups shredded hash brown (thawed)
  • 1 1/2 cup shreeded cheese
  • 1/2 cup 1% cottage cheese
  • 2 tsp sliced green onion
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 pound ground sausage (we used spicy)
  • 4 slices of bacon (we used pre-cooked)
  • Parsley (for garnish)

Ingredient Swaps

Instructions

  1. Preheat oven to 350 degrees
  2. Place 3 cups shredded hashbrowns on paper towels to thaw (takes approximately 30 mins)
  3. Place 1 pound of ground sausage in a skillet over medium heat and cook until browned
  4. Gather 1 ¼ cup Egg Beaters eggs, 3 cups thawed shredded hash browns, 1 cup of the shredded cheese (½ cup will be used later), ½ cup 1% cottage cheese, 2 teaspoons of sliced green onion, ¼ teaspoon salt, ⅛ teaspoon pepper, 1 pound of ground sausage and combine into a large bowl (or combine in your baking dish)
  5. Top the ingredients in the baking dish with ½ cup shredded cheese
  6. Place baking dish (we used a 2.5 quart-sized baking dish) in oven, uncovered, for 45 minutes
  7. Cook 4 slices of bacon and break into pieces (we love the pre-cooked bacon…it’s just so easy)
  8. Remove baking dish from the oven and top with the bacon pieces
  9. Return to oven and cook an additional 5 minutes
  10. Garnish with parsley and any remaining sliced green onions
  11. Let stand for about 5 minutes, then serve
