Ingredients

  • 13 ounces apricot preserves (jar)
  • 1/2 cup vegetable stock
  • 1 tsp balsamic vinegar
  • 1 tbsp fresh chopped rosemary
  • 24 ounces Lightlife Veggie Meatballs
  • 1 pinch salt
  • 1/4 tsp black pepper

Instructions

  1. In a small pan add the first 4 ingredients and bring to a simmer. Add the meatballs and warm on low for about 10 minutes.
  2. Season with some salt and black pepper.
  3. Poke 1 or 2 meatballs onto each skewer and serve warm on a large platter.
  4. Garnish with more chopped rosemary.
