It's no secret that you can grab a jar of barbecue sauce at the store, and there's no shame in that. But when you see how simple the ingredients are to make your own homemade sauce, you'll wonder why the heck am I paying 5 bucks for it?
Today I'm sending some easy dinner vibes your way from my friend, Julie Wampler. Her new book, Dinner For Two has pages and pages of easy and super-delicious sounding recipes. I've already dog-eared a whole bunch for the future.
Julie also cooks for her blog Table for Two so she knows her way around the kitchen and has stacks of amazing recipes to check out. But for now, I made Julie's Slow Cooker Pulled BBQ Chicken Sandwiches.
I'm a fan of anything slow cooked, I'm a believer that the flavor is 1000 times better than something cooked for 20 minutes, especially meat and poultry. After 3 hours, the chicken is so tender that you can shred it effortlessly with a couple of forks.
The sauce is tangy but sweet with miles of flavor. Don't feel bad if you revisit Julie's recipe and all you do is make the sauce. you could easily use it on other slow cooked meats like brisket, pulled pork, and short ribs.
Once the chicken has been shredded, add it back into the pot and stir gently to cover with the thick, rich sauce. Pile the chicken high on a soft brioche or french roll and go at it with plenty of napkins and an empty stomach, going back to that slow cooker for seconds is encouraged. You'd be bonkers not too!
Slow cooked chicken shredded and mixed through a sweet and tangy homemade BBQ sauce. This is such an easy weeknight dinner choice.
