I mentioned in our Cilantro Lime Crispy Rice recipe that I am a fan of Beat Bobby Flay on the Food Network.  Our house has benefited from another ingredient often featured on this show - Crushed Calabrian Chili Peppers.  It sounds spicy, but it’s not…it’s actually a perfect ingredient for so many recipes and it makes the Pimento Cheese Spread explode with flavor on this bacon burger.

The Pimento Cheese Spread that we use on top of the burger is obviously amazing when combined with the crisp of the bacon and succulence of the burger.  It is also incredibly versatile and can be used in pastas or even plain as a dip.  This cheese spread began in our home as a dip with crackers for myself and Stephanie, and with tortilla chips for the kids.  No matter how you use it, make sure you make it and don’t walk too far away from the bowl!

Ingredients You’ll Need - Quick Snapshot

Here are the ingredients you will need (see quantities below):

  • Hellman’s Mayonnaise - The foundation of the cheese spread
  • Kraft Grated Parmesan Cheese - The first of the three-cheese blend
  • Extra Sharp Cheddar Cheese (Shredded) - I love this cheese so much
  • Asiago Cheese (Shredded) - Likely will need to buy a block and grate it
  • Crushed Calabrian Chili Peppers - The key to the cheese spread!
  • Diced Pimentos - A lovely underrated ingredient
  • Garlic Powder - Just a little bit
  • Pepper - Just enough to taste
  • 2 Pounds of Ground Beef - We bought 8 pre-made ¼ pound patties
  • 8 Hamburger Buns - One for each burger
  • 16 Slices of Bacon - Never ever forget the bacon (we love the ease of pre-cooked)

The Process

I’ve made this Pimento Cheese Spread so many times I don’t even have to measure the ingredients anymore.  You can feel free to take liberties on more or less of the ingredients you like the best.  For example, if you like a little more kick, add more Crushed Calabrian Chili Peppers.

Mix all of the ingredients in a small bowl.

Ingredients

  • 2 cups Hellmann's Mayonnaise
  • 1/4 cup Kraft grated parmesan cheese
  • 1/2 cup extra sharp shredded chedar cheese
  • 2 tbsp crushed calabrian chili peppers
  • 1 tbsp diced pimentos
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 2 pounds ground beef (or 8 pre-made 1/4 pound burger patties)
  • 8 hamburger buns
  • 16 slices of bacon (we use pre-cooked bacon)

Ingredient Swaps

Instructions

  1. In a small bowl, combine 2 cups Hellmann’s mayonnaise, ¼ cup Kraft grated parmesan cheese, 1/22 cup extra sharp shredded cheddar cheese, ½ cup shredded asiago cheese, 2 tablespoons crushed calabrian chili peppers, 1 tablespoon diced pimentos, 1 teaspoon garlic powder, 1 teaspoon pepper
  2. Stir until well blended
  3. Refrigerate for at least an hour
  4. Cook (or reheat if using pre-cooked) 16 slices of bacon
  5. Once you have your 8 burger patties ready, cook (or grill) them to your desired doneness
  6. Place each burger on the bun bottom
  7. Add two slices of bacon to the burger
  8. Top with a heaping spoonful of the pimento cheese spread
  9. Enjoy!
