I'm always rambling on about my peach tree because it's given me great recipes like this Peach Coffee Cake and Peach Salad but here's another recipe that developed because of it. Straight up easy Peach Cobbler with Blueberries and Bourbon. This is one of those loosey goosey recipes where you just toss the fruit in some sugar an cornstarch and make an easy biscuit dough loaded with butter.

Oh but wait...there's bourbon too!

Boozy desserts are the best. Once the alcohol has burned off, you're left with an awesome sauce that soaks into the fruit making it perfect for that huge scoop of vanilla ice cream.

Melted ice cream, crunchy buttery biscuit and sweet juicy fruit. Why do we even need any other desserts in the world?

Some people might say this would slip right into the fall dessert category but really, eating this at room temperature on a warm summers night is a perfectly normal thing to do.

Fresh peaches are in season right now, blueberries too and let's be honest, bourbon is always in season!

Biscuits, we love them right?

Light, fluffy and butter layered biscuits with crunchy sugary tops.

Those are the best kind, the only kind of biscuit to make.

Biscuits that soak up all of that peachy bourbon sauce. I grew up with lots of fruit crumble being made by my mom and I only discovered cobbler when I moved to the U.S.

I feel like I missed a lot of potential dessert options growing up.

Grab a bowl, preferably handmade like the one in this picture made by me (for real) and fill it with a scoop of cobbler, some sauce and a dollop of your favorite ice cream.

You can dust with powdered sugar if you want to get fancy like me.

Spoon, scoop, eat and you're done.

Comforting fruit cobbler with blueberries and bourbon!

Ingredients

  • 2 pounds fresh peaches cut into thick wedges
  • 1 oz pack blueberries 6
  • 1/4 cup brown sugar
  • 1/4 cup regular sugar
  • 1 1/2 tablespoons cornstarch
  • 4 tablespoons bourbon
  • 2 teaspoons vanilla extract

FOR THE BISCUIT TOPPING

  • 1 1/2 cups all purpose flour
  • 2 tablespoons sugar plus extra for sprinkling
  • 2 1/2 teaspoons baking powder
  • 6 tablespoons cold unsalted butter chopped into small pieces
  • 1/2 cup whole milk or heavy cream plus extra for glazing the biscuits

Instructions

  1. Peahen the oven to 400 degrees F.
  2. In a bowl, toss and combine the peaches, blueberries, sugars, cornstarch, bourbon and vanilla.
  3. Pour the mixture into a 9 inch cast iron or heavy metal pan.
  4. In another bowl, add the flour, sugar, baking powder, butter. Crumble together until the butter is like sand.
  5. Mix in the milk until the dough comes together and forms a ball.
  6. Dump the dough out onto your floured work surface and pat into a circle about 1 inch thick.
  7. Using a 3 inch circle cutter, cut out 6 pieces of the biscuit dough and set them on top of the fruit mixture.
  8. Using a pastry brush, glaze the biscuits with the remaining milk and then sprinkle liberally with sugar.
  9. Place the cobbler into the oven and bake for about 30-35 minutes and the biscuits are golden brown and well baked underneath.
