I have another super easy dinner recipe to help make things in the kitchen flow a little easier right now! With only a few simple ingredients that shouldn't be too hard to find and it's made in the Instant Pot, this Chicken Florentine Pasta is so good.  A traditional Italian Chicken Florentine dish would have chicken with a creamy white sauce and served on a bed of wilted spinach. I switched things up a little bit but still have all the components of the tasty dish from Florence.

How to make my Chicken Florentine Pasta

You can make it completely in your Instant Pot by starting with searing the chicken to develop a nice outer crust on it. This recipe is pretty forgiving so don't worry too much about the size of the diced chicken. Ideally you want them to be small enough to fit into your mouth easily so about an inch square is what I'd recommend.

Making the creamy white sauce

Usually I'd make a white béchamel sauce for a recipe like this, but the is even easier and just requires combining the butter, stock, cream and then adding in the remaining chicken and pasta. Once the cook time is over and you open the lid, you can see how thick the sauce has become and if you'd like it thicker. You can easily make this happen by mixing together 1 tablespoon of cornstarch and 1 tablespoon of water until the cornstarch dissolves and then add it to the Instant Pot mixture. This will make your Chicken Florentine a little thicker and more creamy.

Adding the spinach to the recipe

The spinach is an important part of any type of Florentine dish and this spinach doesn't even require any cooking. That's right, the spinach will wilt perfectly with the existing heat of the chicken and sauce.

Serving your chicken Florentine pasta

Serve at once by scooping onto a bowl or deep dish. I like to add even more Parmesan cheese over the top along with a sprinkle of coarse black pepper.

Can I use any variety of pasta?

You can definitely switch out the bowtie pasta as long as it's a similar size replacement. For example if you wanted to use elbow macaroni which is much smaller I'd probably recommend 3 cups instead of the 2 cups of bowtie pasta in the recipe. Good replacements could be,

  • Penne
  • Fusilli
  • Rigatoni
  • Fettuccine
  • Linguine

  • 2 tbsp olive oil
  • 2 large boneless skinless chicken breasts cut into 1 inch cubes
  • 2 cups sliced brown mushrooms
  • 1 medium onion diced
  • 1/2 stick unsalted butter (2oz)
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 1 tsp dried oregano
  • 1 pinch salt and black pepper
  • 2 cups bowtie pasta (farfalle)
  • 1 cup grated Parmesan plus extra for garnishing
  • 1 large handful of prewashed spinach leaves

Ingredient Swaps


  1. Turn on your instant Pot to the sauté setting.
  2. Add the olive oil and then the diced chicken
  3. Sear the chicken quickly for about a inute then transfer to a bowl.
  4. Add the mushrooms, onion and butter and cook for about 3-4 minutes.
  5. Finally add the stock, cream, oregano, salt and pepper, pasta and Parmesan cheese
  6. Transfer the chicken form the bowl back to the instant Pot and stir well.
  7. Place the lid onto the Instant Pot and secure.
  8. Switch from sauté to high pressure for 6 minutes.
  9. Cook and then release steam naturally for two minutes afterwards.
  10. Release any remaining steam and remove the lid and stir.
  11. Switch back to sauté and bring to a simmer.
  12. Add the cornstarch and water mixture and stir for 2 minutes.
  13. Add the spinach and stir until spinach is wilted.
  14. Serve at once and garnish with extra Parmesan cheese
