I bet if you asked 100 people about their guacamole recipe, they'd all say theirs was the best. That's because guacamole is one of those easy recipes that can be made more than one way, and usually always ends up tasting amazing.

You just can't mess up such an iconic dip with a few simple and fresh ingredients, and it all begins with perfectly ripe avocados.

I prefer my guacamole on the chunkier side and full of flavor but still with a tiny acidic bite from the lime juice. For this guacamole recipe I decided to make it with grilled avocado, making that flavor ten times better because of the char from the grill.

How to make grilled avocado guacamole

Step 1

Grill the avocados

Rub each avocado half lightly with some olive oil. Too much oil will produce flare-ups and could ruin your avocado.

Make sure your grill (gas or coal) is fully hot before placing the avocados skin side up onto the grates. Let them sit for a few minutes before lifting one to see how charred it is.

Once they're done, transfer to a plate and prepare the rest of the ingredients.

Finally, taste your guacamole and adjust the seasoning with more salt or black pepper. Serve at once or cover with plastic wrap and store in the fridge until ready.

What happens when my guacamole turns brown?

You can still eat it if it's not more than a couple of days old. Once an avocado is exposed to oxygen, a chemical reaction takes place the same as in apples, and they turn brown.

A quick stir of the guacamole will bring back that green color. The brown is just on the surface.

Is guacamole healthy?

Because guacamole is almost all avocado, it can be a very healthy dip. Even though avocado calories are almost all fat, they're beneficial fats. Don't go crazy with the salt and spices and switch from tortilla chips to fresh veggies for dipping!

Will grilled avocado taste different?

It won't taste radically different except for a slightly smoky taste. Whenever I use tortillas to make my carnitas tacos, I always make sure to char them over a flame to get the same results.

Ingredients

  • 3 large ripe avocados
  • 1 tbsp.  olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp Kosher salt
  • 1/2 tsp black pepper
  • juice of half a lime
  • 1 small tomato seeded and finely diced
  • 1/4 cup red onion diced
  • 1/2 cup fresh chopped cilantro

  1. Preheat your grill to a high heat.
  2. Cut each avocado in half and remove the stone.
  3. Rub the avocado flesh lightly with some olive oil.
  4. Place the avocado skin side up onto the grill and grill for about 3-4 minutes depending on how hot your grill is.
  5. Scoop out the avocado flesh and transfer to a bowl.
  6. Add the remaining ingredients to the avocado and mix together with a fork until you reach your desired consistency.
  7. Taste the guacamole and adjust the seasoning if needed.
  8. Serve with tortilla chips or fresh veggies.
