Grilled fish tacos are the best summer backyard recipe you can have! Fill some freshly charred tortillas and top with your favorite salad.
But let's be honest, as much as I love the crispy layer of golden fried batter they can be a lot of work to create. Your kitchen will smell like KFC for a week, and you'll need to get rid of the oil once it's cool.
Boooo, clean up is a pain! These tilapia fish tacos will deliver as much flavor as their battered brothers but with almost zero mess.
I also didn't use tortillas. I know, I've lost you now. You're thinking I'm crazy and how can I possibly have a fish taco without a tortilla. But you can.
Flatout Foldit's are perfect for the job. They come joined together like two circles so all I needed to do was cut them in half and I had a perfect street size "tortilla" to hold my salad and grilled fish.
They're also only 100 calories each, but remember we cut them into two, so a teeny 50 calories per taco! And with fish that's grilled and not fried, I think I just gave you a healthy taco for dinner.
Season your fish with whatever you have on hand, it could be as simple as salt and pepper or one of those fancy spice rubs that you got for Christmas but haven't opened yet. A drizzle of good olive oil and lay them on the grill for a couple of minutes. This is way too easy.
