An easy and filling pita sandwich stuffed with two grilled black bean patties, lettuce, tomato, red onion and feta cheese. Skip the bun and go for less calories with pita!
Have I ever confessed my eternal and undying love for sandwiches to you? Probably not because, awkward. But honestly, sandwiches are the best and if you switch up your usual sliced bread for a pita sandwich, things will start to get awesome!
My favorite pita sandwich has to be one I used to eat after a night out with friends, way back in my younger days. It was pita bread stuffed with doner meat, hot sauce and shredded cheddar cheese.
It sounds a bit sketchy but man, it was delicious. And then I met the black bean burger from Lightlife and my sandwich love spark was reignited. It's sort of a healthy burger Greek style!
The black bean patties are so easy to cook and can be done in a few minutes. Made from soy, cooked black beans and a whole bunch of glorious spices, these are perfect for your vegetarian or vegan guests who might turn up at your party.
In fact they taste so good, I'd be willing to bet anyone regardless of diet or food choices would inhale one of these black bean pita sandwiches! Once you've stuffed that pita bread with your favorite fillings, just fold it in half and eat it, so simple!
Next time I might lay down some southwestern salsa over the patties and maybe a little spicy Pepper jack cheese for maximum heat. Whatever you choose to use, make sure you have plenty of patties on hand because I've had people try these and ask for more.
