This is a fantastic one-pan baked salmon dish perfect for those busy weeknight dinners. Salmon is baked with potatoes, fresh herbs, broccoli and white wine.

I'm quite lucky that my kids will eat pretty much anything I make for them but seafood would probably be at the top of their list. They love getting their hands dirty especially if it's anything that takes some finger work to get the meat, like clams, crab legs or shrimp.

They're kinda like little savages, it's quite entertaining to watch. When it comes to fish though I can see them becoming a little more choosy, mainly because it has no fun-factor.

It's just fish, ready to eat with no shell to peel, legs to break or head to pull off. Luckily they never turn their noses up at salmon.

Whether it's just simply roasted like this recipe, in tacos or even flaked over a Caesar salad I know I'm going to see clean plates. I even saw my boy licking the egg from his breakfast plate recently, like I said...savages.

An easy one pan baked salmon dish for the family

Salmon is a forgiving fish, easy to cook and because it's pink It's easier to gauge when fully cooked as opposed to a piece of white fish which is more opaque. There are loads of ways to cook salmon. Steaming, poaching, pan frying and grilling it are all great ways to start, it cooks fast so keep a beady eye on it.

My favorite way is to roast it in the oven and watch the edges turn crispy and golden but the inside is still moist and slightly pink. By adding the potatoes and other ingredients to this salmon bake, you have a whole meal cooked on one baking tray at the same time with no fuss.

How much easier can making dinner be? The flavor of the vegetables caramelize with the white wine, garlic, and herbs and the smell will drive you crazy.

Ingredients

  • 1 1/2 pound filet of salmon
  • 1 pound baby fingerling potatoes
  • 1/2 cup red onion (sliced thinly)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 1/2 cups small broccoli florets
  • 1 clove large garlic (sliced very thinly)
  • 4 tablespoons olive oil (divided)
  • 2 tablespoons dry white wine
  • Salt and black pepper
  • Lemon for flavor if desired

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Cut the salmon into 5 pieces.
  3. Slice the potatoes in half and set on a large baking tray (17inches x 12inches)
  4. Add the broccoli, red onions, garlic and both herbs to the potatoes.
  5. Drizzle 3 tablespoons of the olive oil over the mixture and toss well. Spread the vegetables out evenly.
  6. Place each piece of salmon onto the baking tray with the vegetables around them.
  7. Drizzle the remaining 1 tablespoon of olive oil over the salmon.
  8. Pour the white wine over the ingredients and season with salt and pepper.
  9. Bake in the oven for 25-30 minutes.
