Chicken is always popular in my house for everyone. The tricky part is trying to come up with new and fun ways to serve it and not have the family become bored with it.
The perfect time for me to try out a new idea is when the kids come home from school. I make lunches for the both of them, but after school, they always rush into the kitchen as if they haven’t eaten for a month.
This is the routine when they get home every day.
Dump backpacks.
Kick off shoes, narrowly missing me or any wall pictures.
Pick up the dog and smother him with kisses, fighting with each other about who has held the dog longest.
Open the fridge and start pulling out food like they’re on Supermarket Sweep. It’s crazy.
I know how easy it can be to just grab a granola bar or open a bag of pretzels after school, but these wraps are too easy so make them instead. They’re made using Flatout Flatbread, a thin bread like a tortilla but with way more flavor. I used Light Italian Herb but there are so many other flavors to choose from.
Only four healthy ingredients are needed. Cucumbers, apple, chicken and ranch is all it takes to make these healthy wraps.
Save yourself some time and buy a cooked chicken at the store, shred it and use any leftovers in a salad, wait just add the salad to a Flatout wrap and roll it up to go- fistbump…could we be any healthier friends?
My kids made their wraps in less than a minute, ate them and then finished off the rest of the ingredients. After five minutes, there was nothing left and they had protein, fruit and a vegetable.
Chop up the chicken. Slice the cucumber and apple and that’s it. I think having the kids make their own food is a huge step in helping them find their own palate.
Try switching up any one of these ingredients for something else like sliced ham with cheddar cheese, mustard and pickles. Just don’t use too many items and over-stuff them.
I’ve always loved a great sandwich, but wraps are so much easier to eat especially if you’re not close to a table. Make them hot or cold and go crazy with the fillings!
