An easy and tasty cheesy tater tot dish perfect for football and game time parties. Crunchy tater tots covered in a creamy blue cheese sauce and topped with bacon.

Ingredients

  • 1 2 pound bag of frozen tater tots
  • 5 slices bacon cooked and chopped
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups whole milk
  • 3-4 ounces creamy blue cheese *see notes*
  • Sea salt and cracked black pepper
  • 2 whole green onions chopped up finely

Instructions

  1. Bake the tater tots in the oven as per the instructions on the bag.
  2. While the tots are cooking melt the butter in a medium sized non-stick pan.
  3. Add the flour and whisk until it starts to bubble.
  4. Cook over a medium heat whisking constantly for about 2 minutes.
  5. Gradually add 1 cup of the milk to the pan slowly, whisking all the time to avoid lumps.
  6. Heat over a low heat and add half of the blue cheese.
  7. Let the heat of the sauce melt the cheese whisking often.
  8. Add another 1/4 cup of the milk gradually followed by the remaining blue cheese.
  9. Whisk until all the milk has been combined and the sauce is smooth and creamy.
  10. Season with salt and black pepper.
  11. Add 1/2 cup of chopped bacon to the sauce and mix through.
  12. If the sauce starts to thicken too quickly add the remaining milk and any extra that you may need to keep it consistent and not too thick.
  13. Once the tater tots are done place them on a platter or deep bowl.
  14. Pour the sauce over the tots.
  15. Garnish with the remaining chopped bacon and green onions on top.
  16. Serve at once while still hot.
