Ingredients

  • 2 large poblano chili's
  • 1 cup diced onions
  • 1 1/2 cups grated Monterey Jack Cheese, divided
  • 1 cup cooked brown rice
  • 1 15.5oz can BUSH'S Black Chili Beans
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • fresh cilantro

Instructions

  1. Preheat the oven to 400 degrees
  2. Slice the poblanos in half and place them on a baking sheet pan
  3. In a bowl add the onion, 3/4 cup grated cheese, rice, beans and seasonings. Stir to combine
  4. Fill each poblano half with the mixture and top with remaining grated cheese
  5. Bake in the oven for 15 minutes and the cheese has melted
  6. Garnish with chopped cilantro and serve at once
