For me, there's a fine line between soup and chili. My chili has to be thick almost like a casserole and my soup, thick but pourable.

As the weather changes and fall creeps in, it's time to bring out the recipes that are easy to make and can feed the family with zero stress and minimal cleanup. This beef chili recipe checks off all of those boxes.

It's an easy recipe that tastes like you had it simmering on the stovetop for hours to develop the rich flavors. But actually, it just takes about 40 minutes to cook!

A big part of creating those rich flavors is obviously the ingredients that go into this pinto bean beef chili. Whenever I make any variety of chili it'll always have beans and tomatoes included.

These are two staple ingredients that will help to thicken the chili and give it some heartiness. I was happy to partner up with Hunts Tomatoes and BUSH'S Beans for my tomato and bean combo.

I used Hunts 100% Natural Vine Ripened Petite Diced Tomatoes which have the perfect ratio of tomato to juice, meaning when I added them to the pot, things didn't get too runny. One 14oz can is a perfect size!

Usually, I'll always use pinto beans so I was super happy to see BUSH'S Beans have a pinto bean in chili available as well as a whole product choice of beans that have been simmered in chili sauce! So when I added my pinto beans, I was actually adding even more flavor to the pot.

There's no way this beef chili with huge chunks of bacon was not going to be off the charts on the taste scale! Along with some other spices, onion and a splash of dark beer, this is a chili you'll want to have on rotation.

My kids loved it and I thought for sure there'd be some leftover for lunch the next day. I was wrong, they went back for seconds, all I had at the end was an empty pot which is the best sign the cook can have that the recipe was a major success!

Ingredients

  • 12 oz bacon
  • 1 pound ground beef
  • 1 cup onion diced
  • 1/3 cup tomato paste
  • 1 14oz can Hunts Petite Diced Tomatoes
  • 1 15oz can BUSH'S Pinto Beans in a Chili Sauce
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 cup dark beer
  • 1/2 cup beef broth
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  1. Cut the bacon slices into chunks and cook in a large pan.
  2. Add the ground beef and cook until no longer pink.
  3. Transfer the bacon and beef to a large dutch oven or heavy pot.
  4. To the pot add the onion, tomato paste, tomatoes, beans, garlic powder, chili powder, cumin, salt, pepper, beer, and broth.
  5. Stir well until all of the ingredients are mixed.
  6. Bring to a simmer and cook on low for about 45 minutes stirring often.
  7. Serve as is or with rice and your favorite toppings.
