If I'm ever struggling to figure out what to make for dinner, pasta is always my go-to choice. I get that it's not low carb and this Chicken Cheesesteak Baked Ziti has enough cheese in it to cover a small village, but the flavor! Did I mention the flavor?

Just making sure. Peppers and onion along with chunks of Italian seasoned chicken cooked in a rich provolone cheese sauce. Do you see a resemblance to a certain kind of sandwich?

Yesss, the cheesesteak! Cheesesteak in pasta form, but with no bun so that's a carb reduction right there! The recipe comes from the brain and author of Modern Comfort Cooking, Lauren Grier.

Ingredients

PASTA

  • 8 oz dry ziti or rigatoni pasta

PEPPERS AND ONIONS

  • 2 tbsp butter
  • 1 cup thinly sliced onion
  • 1 cup thinly sliced red pepper
  • 1 cup thinly sliced green pepper
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp red wine vinegar

CHICKEN

  • 2 tbsp olive oil
  • 1 pound boneless skinless chicken breast cut into strips
  • 1 tbsp Italian seasoning
  • 1 tsp kosher salt
  • 1 tsp black pepper

PROVOLONE SAUCE

  • 4 tbsp unsalted butter
  • 4 tbsp all purpose flour
  • 2 cups whole milk
  • 1 1/2 cups shredded provolone cheese
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 6 slices provolone cheese
  • fresh parsley for garnish

Ingredient Swaps

Instructions

  1. Boil the pasta as per the directions on the pack, drain and transfer to a large bowl.
  2. Melt the butter in a pan and add the onion, peppers, salt, pepper and red wine vinegar.
  3. Cook until the veggies become soft and golden brown. Transfer to the bowl with the pasta.
  4. In the same pan heat the olive oil and add the sliced chicken.
  5. Season the chicken with the Italian seasoning, salt, and pepper. Stir until no longer pink in the center.
  6. Transfer the chicken to the bowl with pasta and the veggies.
  7. In a large pan melt the butter and add the flour. Whisk for a few minutes until well mixed.
  8. Gradually add the milk whisking constantly to prevent lumps and the sauce becomes smooth.
  9. Add the shredded provolone and simmer for 3-4 minutes whisking at times.
  10. Season with salt and black pepper.
  11. Pour the sauce into the bowl with the pasta, veggies, and chicken.
  12. Toss well so that all the filling is coated with the sauce.
  13. Spray a 13x9 inch pan with non-stick spray and transfer the mixture to the pan.
  14. Add the provolone slices over the top and bake in a 350-degree oven for 20-25 minutes and the cheese is golden brown.
  15. Garnish with chopped parsley and serve at once.
