Creamy Avocado Toast topped with smoked bacon and cilantro. Perfect served with a runny egg!

And I think you’ll love this mega-breakfast version!
I eat toast pretty much every morning for my breakfast, and my little toaster oven has never let me down, but it’s showing it’s age. So when Wolf Gourmet asked if I’d like to try their sleek four-slice toaster I had to say for sure!
Like any Wolf Gourmet appliance, you can feel the quality when you take it out of the box. It’s solid and it toasts bread like a boss. It also came with the sharpest bread knife I think I’ve ever used!
After a few minutes my thick slices of sourdough were perfect and they popped up looking all golden and toasty. There’s even a “Keep Warm” function, helpful if you make your toast in the morning but have to keep going into the kids rooms a million times to get them out of bed. True story everyday for me!
I topped my sourdough with mashed avocado, salt, black pepper, thick chunks of smoked bacon and fresh cilantro. A runny fried egg on the side is optional.
Is it really, why wouldn’t you want a fried egg with crispy edges and a sunny yolk paired up with your mega avocado toast breakfast?
If there really is a breakfast of champions, I think this might be it. It’ll keep you powering on through until lunch where you could have another toast, maybe with peanut butter, banana and honey or strawberries, mascarpone and maybe a drizzle of melted chocolate?

Wolf Gourmet Appliances supplied me with product for this post, all thoughts and opinions are my own.
- 2 slices sourdough bread
- 2 whole avocados
- 1 pinch salt
- 1/4 tsp black pepper
- 4 slices smoked bacon, cooked and chopped
- 2 tbsp olive oil
- 4 whole eggs
Toast the sourdough to your preferred color and set aside.
Peel the avocados and transfer to a bowl, add the salt and pepper and mash with a fork.
Divide the avocado between the pieces of toast and top with chopped bacon.
In another pan heat the olive oil and then add the eggs one at a time. Cook until preferred doneness and place on a plate with one of the toasts.
Garnish with fresh grated Parmesan (optional) and serve at once.
