In a large bowl combine the flour, 1 1/2 cups of grated Asiago, yeast, sugar, salt, Italian seasoning, rosemary, pepper flakes, garlics, onion and water until a dough forms.
Transfer the dough to a floured work surface and knead until a smooth ball forms.
Transfer the dough to a lightly oiled clean bowl and place it seam side down in the bowl.
Cover with a clean towel and let the dough rise in a warm place for 15 minutes.
Divide the dough in half and form into two smooth dough balls.
Place the dough balls on a baking sheet pan and gently flatten the surface a little.
Using a sharp knife cut three slits on each loaf and drizzle with the olive oil. Sprinkle remaining Asiago cheese over the loaves.
Place the pan on the middle rack of a cold oven and add a pan of hot tap water directly below the dough pan.
Close the oven and set teh temperature to 400 degrees F.
Bake for 40 minutes and then let cool on a wire rack.
