Banana Bread with Chocolate Chunks and Pecans

Delicious banana bread loaded with chocolate and pecans. This is so easy to make and always a winner with everyone I know!

Ingredients

  • 2 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup unsalted butter cut into small squares
  • 1/3 cup sugar
  • 3 whole ripe bananas, 2 roughly mashed and 1 cut into 3 long slices
  • 3 large eggs, beaten
  • 2 tbsp honey
  • 3/4 cup chocolate chunks You can chop up a good quality chocolate bar
  • 1/2 cup chopped toasted pecans

Instructions

  1. Grease an 8x8 baking dish and line with parchment paper and preheat the oven to 325 degrees F.

  2. In a medium bowl, combine the flour, baking powder and salt.

  3. Add the butter and crumble with your fingers until it's like sand.

  4. Add the sugar, mashed bananas, eggs and honey to the flour and mix well.

  5. Fold in the chocolate chunks with a spatula.

  6. Add the batter to the pan and spread out evenly.

  7. Scatter the chopped pecans over the surface of the batter then lay three slices of banana on top, slightly pushing them into the batter to settle. Trim the ends of the banana to fit the width of your pan.

  8. Bake in the oven for around 45-50 minutes and the top seems firm when gently pushed with your fingertip.

  9. Let cool slightly before slicing.
