For me, it's an awesome way to fuel the kids with decent ingredients and know that they're ready to go especially if I make breakfast smoothies! But I've never used watermelon as a smoothie ingredient, what the heck? It seems like a no-brainer idea and since the weather here in California lately has been sun-hot these are the perfect way to cool down! I made this watermelon smoothie a few times but couldn't get that creamy consistency like a regular smoothie, which isn't that surprising when each bite of watermelon is roughly 92 percent water. It needed something to thicken it, and frozen strawberries and a banana worked perfectly. Another thing I love to add to our smoothies is protein powder. Both kids are in some kind of camp each week through the summer and the extra protein boost is helpful.

With a whopping 30 grams of protein per serving and a teeny 3 grams of sugar, it's the perfect way to boost my shakes and smoothies. There's already enough natural sugar from the fruits. And with zero artificial flavors, colors or sweeteners I don't mind sharing it with the kids. It also comes in chocolate flavor which I'll be using in my next recipe, chocolate peanut butter smoothie!

This recipe was ridiculously easy once I figured out the ratios of watermelon to yogurt and strawberries. Just add everything to a blender and hit the button. You can use regular plain low-fat yogurt or if you're fancy, vanilla yogurt makes a huge difference because...vanilla! Frozen bananas are available in almost every store, but if I find some of my bananas going black and overripe I'll peel them, throw them in a ziplock baggy and freeze them. I actually do this with all of my fruit that looks like it's on its last legs, it's super ripe and I don't end up throwing it in the trash! Chia seeds are a superfood that's packed with fiber and protein. Enough said.

Ingredients

  • 2 cups watermelon
  • 1 1/2 cups low fat vanilla yogurt
  • 1/2 cup almond milk vanilla
  • 3 tbsp Premier Protein Vanilla Whey Powder
  • 2 tsp chia seeds
  • 1 banana frozen
  • 1 cup strawberries frozen

Instructions

  1. Add all of the ingredients to a high-speed blender.
  2. Start on low speed and then increase to high speed for about 30-45 seconds or until the consistency is creamy and lump-free.
  3. If the mixture is still too thick for you, adding more milk gradually will solve the problem.
  4. Divide between two tall glasses and garnish with extra chia seeds if desired. Serve at once.
