Tasty Tortilla and Garden vegetable Cream Cheese Pinwheels!

I can’t believe how quickly summer disappears! One second I’m picking up my kids from the last day of school, thanking the tired teachers for all of their hard work and lugging home bags of projects that we hang proudly in the kitchen.

And then we’re opening shiny new backpacks and preparing new outfits for another year. But I wouldn’t change it for a thing. Along with the daily school life is making lunches for both of my kids.

They’ve always taken lunch to school and I probably don’t need to tell you, but keeping choices and ideas new and exciting can take a toll on a parent.

Luckily we have some choices that can make things go a little easier in the mornings. I teamed up with ZIPLOC® brand , Mott’s and NABISCO to create a fun and easy lunchtime experience.

I asked my kids to tell me what their favorite summertime memories were, and not surprisingly they both spoke about Fourth of July.

 

Well yeah, of course, who doesn’t love it? Tons of food, fun, water fights and fireworks!

I asked them to draw a picture on some ZIPLOC® brand bags so that they can pack their lunch into them and be reminded of the awesome summer we had when they open them up at lunch time.

Summer memories should be forever! For this easy ZIPLOC® brand Bento Box lunch, we made some Tortilla and Garden Vegetable Cream Cheese pinwheels with red pepper slices along with a Mott’s Unsweetened Applesauce pouch and a handy bag of delicious NABISCO OREO Mini Cookies .

There’s so many other snack options from NABISCO so you can easily switch them up every day.

You can make these tasty pinwheels in less than 10 minutes which is perfect for those crazy mornings. If you love to be even more organized, try making them the night before and have your kids join in the fun!

I always feel that introducing the foods to my kids beforehand makes it more likely they’ll come home with an empty lunch box.

An easy back-to-school lunchbox idea with tortilla style pinwheel sandwiches.

Ingredients

  • 2 small flour tortillas
  • 1/2 cup garden vegetable cream cheese
  • 1/4 cup diced red peppers
  • 1/2 cup chopped cooked rotisserie chicken

Ingredient Swaps

Instructions

  1. Lay the tortillas flat on a clean work surface.
  2. Spread half of the cream cheese over the tortillas.
  3. Add some diced peppers and chicken.
  4. Fold in each end of the tortilla and roll into a tube shape.
  5. Slice into 4 equal pieces and add to the ZIPLOC® brand Bento Box.
