And just like that, summer is almost over. Some people get really sad but I find it exciting strangely enough.

For one, we don't get very bad winters in California so I don't need to worry about that, and my kids will start a new grades with new and exciting challenges ahead of them.

New school year means school lunches and sometimes that makes me sigh a little, like I'm preparing to climb Mount Everest or run 26 miles.

The reason, because it can be hard to make school lunches everyday and keep them interesting.

Hey I realize you're not going to drag yourself out of bed at 5am and start rolling pinwheels for the kids lunches, but you can make these on the weekend and freeze them.

All you have to do is throw a couple in the toaster oven and your kid will be the ultimate cool kid at the lunch table and you'll be the envy of every other mom or dad in the class. It's a win-win situation.

Don't let the kids hog all of the Seneca Snacks because they're awesome for everyone all through the day. They come in three versions- dried apple, pear and sweet potato and then each of those are available in all sorts of flavors, even Caramel Apple!

I crushed up the dried pear snacks and added them to my savory puff pastry pinwheel recipe with mozzarella, smoky bacon and white alfredo sauce. The whole thing gets rolled up and then cut into slices. Bake them until the center becomes melted and the puff pastry is golden and flaky.

It's so hard to just eat one of these, so maybe you better pack two or three in that lunchbox just to be safe!

Ingredients

  • 1 sheet frozen puff pastry thawed
  • 1 tablespoon flour
  • 2 tablespoons Alfredo pasta sauce
  • 3/4 cup shredded mozzarella cheese
  • 3 slices chopped cooked bacon bits
  • 1/2 cup crumbled Seneca Dried Pear Chips
  • 1 egg beaten

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Dust your work surface with some of the flour and lay the puff pastry sheet on top.
  4. Spread the Alfredo sauce over the pastry.
  5. Sprinkle the cheese on top followed by the bacon and finally the crumbled pear chips.
  6. Starting at the end farthest away from you, pull the pastry towards you tucking it in at the same time making a long tight tube shape.
  7. Once the pastry is completely rolled up cut it evenly into 8 pieces.
  8. Place each pinwheel onto the baking tray and brush with some beaten egg glaze.
  9. Bake in the oven for 15-20 minutes and golden brown on top.
