Dialing in your muddling technique makes all the difference in this cocktail, so take note.

What does it mean to muddle?

To muddle means to press the ingredients against the side of the glass with a muddler. The idea of muddling is to release the flavors and oils of the fresh fruit and herbs, not to pulverize them into a paste.

Over-muddling can impart a bitter taste in the drink. A proper muddling technique involves pressing down and twisting the muddler. 

Tips for the best muddle.

  • Use a sturdy glass. If the glass is too thin, you run the risk of breaking the glass with the muddler.
  • Use the right muddler. Avoid varnished wood muddlers, as the varnish can rub off on the glass. Look for unvarnished wood or bamboo muddlers, or ones with a rubber tip. 
  • Twist the muddler, don't pound it. Pounding can damage the herbs and leave them with a bitter taste. There’s no need to overwork the herbs.

Alternatives to rosemary.

If rosemary isn’t your thing, go ahead and sub in another fresh herb like basil, tarragon or mint.

If you don't have Bourbon on hand.

You can sub in rum, brandy or cognac.

Serving a crowd

You can triple or even quadruple the recipe and go pitcher size for a crowd.

Ingredients

  • ½ of a ripe peach cut into slices
  • 1¼ cup sugar
  • 1 tbsp fresh rosemary
  • 1 lemon wedge
  • 2 measures Bourbon
  • 1 measure white wine
  • 1 measure orange juice
  • crushed ice

Instructions

  1. Muddle peach slices, rosemary, sugar, lemon in the bottom of a cocktail shaker
  2. Add Bourbon, wine, OJ and some crushed ice to the shaker
  3. Shake and pour into a low ball or rocks glass filled with crushed ice
  4. Shake and pour into a low ball or rocks glass filled with crushed ice
