Beets have always been a favorite thing to eat for me. Growing up there would always be a jar of pickled beets in the pantry, my dad put them on everything and I even made beet sandwiches.
They tasted great but watching the white bread turn a magical pink color was also really fun!
Now that I'm all grown up, beet salads excite me with feta cheese or balsamic vinegar and maybe a handful of caramelized walnuts thrown on top for some extra crunch. If you've ever bought a raw beet at the store, you'll know it can take a while to cook it.
Which is fine if you're looking for that roasted flavor. But with pickled beets, all of the hard work is already done for you, say goodbye to peeling, cooking (and mess) and still retain the flavor and nutrition.
And it's that nutrition that I wanted to keep when I created this Beet and Spinach Power Smoothie. As well as spinach, I added berries, apple, banana, vanilla yogurt and coconut milk, so you can see it's bursting with ingredients to get you going in the morning or as I had it, as an energy booster after my workout!
Just add everything to your blender and 20 seconds later you have this amazing and bright pink smoothie. Add straw and drink...repeat!
Ingredients needed for a beet and spinach smoothie
- Pickled beets
- Spinach
- Frozen mixed berries
- Banana
- Apple
- Vanilla yogurt
- Coconut milk
How to make a healthy beet smoothie
- Drain the juice from the beets and add to your blender.
- Add the remaining ingredients to the blender and blend for a few minutes until smooth and lump free.
- Pour into a tall glass, add a straw and enjoy!
