The holidays are almost here and with that comes all of the awesome holiday smells. You know the ones I’m talking about, cinnamon, cloves, pastry baking in the oven and apple pies. They seem to be everywhere you go!

Fresh baked pies are as important as the turkey or prime rib when you’re planning a holiday menu, and you can’t just have one or the other. Pumpkin, Apple and Pecan pies are always in my kitchen during the holidays - and for many days after the festivities are finished.If making your own pie sounds a little stressful but you still want to take the homemade route, you can always make this Raisin Apple Cobbler. There’s no need to be making pastry and trying to line a baking dish while defrosting a giant turkey, when you can just add all of your ingredients to a pan and be done with it. I really want to say “It’s as easy as pie” but it’s easy as cobbler!

I kept this Raisin Cobbler simple because apples don’t need a lot of extra ingredients, maybe just some cinnamon and brown sugar. The California Raisins give it that extra little sweet bite and they’re completely natural. They’re also packed with fiber and iron so why not add them to the cobbler?We’re so lucky to have an abundance of fantastic year-round produce available here in California. Raisins from California are the most widely distributed raisin in the country so even if you live in Maine, chances are you are chewing a juicy raisin grown in sunny California!

Ingredients

  • 3 large Granny Smith apples
  • 1 stick unsalted butter (divided)
  • 4 1/2 tablespoons brown sugar (divided)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 3/4 cup California Raisins
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Slice the apples into wedges and place in a bowl.
  3. Melt 4 tablespoons of the butter and add to the apple slices along with 3 tablespoons of the brown sugar, cinnamon, syrup, vanilla and raisins.
  4. Toss together making sure to coat the apples well with the butter.
  5. Place the apple mixture in a medium sized skillet or oven-proof pan and heat over a medium heat for about 10 minutes stirring frequently.
  6. In another bowl combine the flour, remaining brown sugar, baking powder, baking soda and pumpkin pie spice and whisk.
  7. Add the remaining 4 tablespoons of butter to the flour mixture and crumble it through the flour using your fingers.
  8. Pour in the buttermilk and mix until the dough comes together.
  9. Take the pan from the heat and randomly drop balls of the cobbler dough all over the apples.
  10. Bake in the oven for 30 minutes.
  11. Serve warm with vanilla ice cream or whipped heavy cream.
