These Pomegranate Mimosas are fun and fizzy with a touch of fresh basil and triple sec. The perfect way to do brunch or toast the New Year!
I used to think Prosecco was a girly drink, and then I grew up and realized that alcohol with fizzy bubbles was actually really refreshing! I also found out that adding fruit juice made things even more easier to swallow, hence the mimosa mention in this recipe title.
I know, a genuine mimosa is Prosecco and orange juice but I kinda skirted my way around that by adding triple sec which is made from orange peel. Tell me you must have a bottle in your stash somewhere because triple sec seems to be in every cocktail I've ever made!
It all starts with adding a layer of pomegranate juice in the bottom of the glass. Pomegranates are a teeny bit tart and the sweet Prosecco helps keep things balanced.
As if this super-tasty fizzy happy drink doesn't taste awesome enough, we're dropping in some fresh basil just because! Basil is one of my favorite herbs and it won't taint the mimosa that much. But each time you take a drink the leaf gets close to your nose so you catch a whiff of that amazing fresh basil smell.
This is a drink that you can almost make with your eyes closed. It's easy! Between the deep crimson color and the basil, it's guaranteed to be a talking point at any party or brunch. Cheers everybody and hang in there, less than one week until Christmas day!
