Tonight’s dinner seemed like a confused contestant from The Amazing Race trying to reach one place but ending up in another. Let me explain, after looking in the fridge this morning and seeing some pork left from the weekend smoke I planned to have that for dinner in some form. When I reached the store I saw some corn tortillas and thought instead of making pork sandwiches I would make some taquitos, great idea!
Confused menu item #1 – pulled pork taquitos with apple sauce and romano cheese, served with a spicy mayo and barbecue sauce.
I was still wandering around the store trying to think of another item as I didn’t really have a lot of pork left and In keeping with the theme (?) I thought I’d make some tacos. As I browsed through the meat case initially looking for ground beef, I was drawn to some really nice looking ground lamb so I grabbed a chunk of it.
Confused menu item #2 – Lamb tacos with a Greek yogurt sauce and romano cheese.
Yes dinner did seem a little multi-cultural but It was actually really tasty and making your own taquitos is a great way to use up leftovers.
The pulled pork with apple sauce.
The spicy dressing was just a couple tbsp of mayo, add some hot sauce and a dash of ancho chili powder.
My lamb taco, the meat was sauteed with a shallot and oregano, garlic, salt, pepper and coriander.
The sauce was 1 cup Greek yogurt
1/2 of a lime
1 tomato, seeded and diced
a dash of cumin
salt and pepper
a dash of red pepper flakes
1 tbsp oregano
