I hope everyones weekend was a triple 10! I know mine was with the highlight being our friends and family fundraising walk to cure diabetes, or in my wife's words "to kick diabetes butt". In other news I got my fingers green in the garden and ate boat loads of sushi.

As I was stomping through my 5k walk with the sun beating down on me, all I could think about was this ultra-refreshing Lemongrass and Lime Cooler. I must admit the thought of dipping the rim in salt and chucking in a splash of Tequila did cross my mind but for now let's keep it as a virgin cocktail. The lemongrass is really subtle with the lime packing the punch but together they made my tastebuds shuffle.

It all starts with a simple syrup made up of the squeezed limes, sugar, water and lemongrass stalks. The longer you leave this mixture to soak, the deeper the flavor will be. Afterwards just add the mix to some ice and drink through one of those nifty lemongrass straws. I ate at a Thai restaurant recently and saw them serve their drinks this way. I couldn't believe how easy it was, all you have to do is push the inner rings of the stalk out with something long and pokey and you have an awesome straw that'll guarantee many party time ooo's and ahhh's from your guests.

Let's start this new week with fresh tart lemonades and citrus coolers, and by Friday you are welcome to add that Tequila!

Ingredients

  • 6 limes halved
  • 3 cups boiling water
  • 6 tablespoons sugar
  • 1 long fresh lemongrass stalk

Instructions

  1. Squeeze the lime halves collecting the juice in a bowl
  2. Bring the 3 cups of water to a boil and add the already squeezed lime's and sugar.
  3. Smash the lemongrass stalk with the side of a knife and tear open with your fingers to expose the scent and flavor of the lemongrass.
  4. Place the lemongrass into the pot with the limes and gently stir. Let sit for at least 15 minutes.
  5. Pass the lime syrup through a sieve directly into the fresh squeezed lime juice and stir.
  6. Add a handful of ice cubes to the mixture and store in the refrigerator until cool.
  7. To serve, fill a glass with ice cubes and top up with the lime juice.
  8. Add a garnish of a few more sliced limes and a lemongrass straw if desired.
