Is everyone totally excited, or completely freaking out right now because Christmas is in three days??? I'm only waiting on one more delivery from Amazon and my shopping list will be complete, done-zo, extinct! God bless you Amazon! As soon as the shopping is done and you add your "out of office", you can kick back and start planning the food! Christmas isn't just all about the dinner, don't forget breakfast! People seem to go a little crazy for breakfast on Christmas morning, usually making some kind of casserole egg dish like this Ham and Cheese Breakfast Casserole, or maybe you could be prepping some Cinnamon Bun dough on Christmas Eve? Seriously...Is there anything better than waking up to the smell of cinnamon floating up your nose? But let's talk about even easier recipes than those two I mentioned. Buttermilk Scones! Yeah, big and fluffy and covered with a splash of white icing. And these buttermilk scones are sort of special because I added a hot chocolate mix to the dough! Crazy but totally worth it.

They taste just like your favorite cup of hot chocolate, in fact, I definitely want to tell you to dunk one of these scones into your actual cup of warm hot chocolate! Light and fluffy buttermilk scones with hot chocolate mix.

Ingredients

  • 3 cups all purpose flour
  • 1/2 cup sugar
  • 1 envelope of hot chocolate powder mix 3 oz
  • 2 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 sticks unsalted butter cut into cubes 12 tbsp
  • 1 cup buttermilk
  • 3 tbsp milk
  • 1/2 cup powdered sugar
  • 3 tbsp milk

Instructions

  1. preheat the oven to 350 degrees.
  2. In a bowl whisk together the flour, sugar, hot chocolate mix, baking powder and baking soda
  3. Slice the butter into cubes and crumble through the flour until it feels sandy
  4. Add the buttermilk to gently form a dough
  5. Transfer the dough to a well-floured work surface and pat to form a ball
  6. Use a rolling pin to roll into a circle about 8 inches in diameter and 1 inch thick
  7. Transfer the circle to a large baking sheet lined with parchment paper and lightly floured
  8. Using a sharp knife cut the dough into 8 wedges like a pizza
  9. Brush each wedge with the milk
  10. Bake in the oven for about 20-25 minutes until well risen and golden brown
  11. Let cool while you prepare the icing
  12. Whisk together the powdered sugar and three tbsp of the milk. Add more milk if needed to bring the icing to a runny consistency
  13. Drizzle each wedge with some icing and serve with a cup of hot chocolate
