Roasted Root Vegetables with a Maple Balsamic Glaze

Rainbow carrots, parsnips, sweet potatoes and onions are just some of the seasonal vegetables in this dish. Tossed in olive oil, salt, pepper and tons of fresh rosemary and then roasted until caramelized. Just before you serve them, drizzle with the reduced balsamic and maple syrup glaze.
