Peach Texas tea with oranges and lemons

The weather forecast for the next week or two is looking really nice here! I think summer is on its way and I'm so okay with that! I can't wait to get back to eating in the backyard, making pizzas in my new Forno Bravo Wood Fire Pizza Oven (more on that coming soon) and picking fruit from my nectaplum tree. I love when spring and summer start to appear, everything seems much fresher and happier including the produce at the store and the farmer's markets and that's where I managed to pick up a  sweet deal on citrus, but what to do with them? I knew I wanted to make some sort of drink for you guys and I almost took the direction of a margarita because as much as I hate hard liquor, margaritas seem to slide down quite nicely I must say. Trust me and try my blood orange margarita or if you prefer something a little less sweet, I have a grapefruit and cilantro version too!

Peach Texas tea

I had never heard of Texas Tea before, but it turns out its sort of related to Long Island Iced Tea but with tequila. There are a few ways you can make it but using a sweet fruit flavored tea is a good place to start. I went with a peach iced tea but wow, so many flavors of tea available now so I'm sure raspberry, honey, lemon ginger or any tea would taste amazing! And if you've never used fresh herbs in your drinks, then you need to put that on your to-do list stat! Just by adding a big sprig of rosemary to the peach Texas tea gives it a super subtle flavor that you'll love.

Making my easy peach Texas tea

You can make it the night before you plan to serve it and let the rosemary and citrus flavors circulate through the tea. You don't need any sugar because the peach tea is sweet enough, although it does have a splash of simple syrup. I used Lipton Peach Iced Tea. If you go with an unsweetened version you could increase the simple syrup to about 1/4 cup. This recipe makes about 1 1/2 quarts so enough for top ups! It's so easy to make, just add everything to a giant pitcher or a punch bowl and give it a whisk. Add the ice only when you serve it but chill it in the fridge beforehand. Serve with plenty of orange and lemon slices along with extra bushy fresh rosemary sprigs. Find a comfy chair outside and enjoy!

Ingredients

  • 1/2 cup tequila
  • 1/4 cup white rum
  • 1/4 cup Cointreau
  • 2 tbsp simple syrup
  • 1 lemon squeezed
  • 1 orange squeezed
  • 32 oz Lipton Peach Iced Tea

Instructions

  1. In a large pitcher or punch bowl combine the tequila, rum, Cointreau and simple syrup.
  2. Add the lemon juice, orange juice, and iced tea and stir well.
  3. Add a couple of large sprigs of rosemary and let rest in the fridge for at least an hour or until cold.
  4. Serve in a tall glass with ice cubes and garnish with wedges of lemon and orange and a tall sprig of rosemary.
