Becoming an ambassador for Lightlife has opened my eyes quite a bit to vegetarian options. This Breakfast Skillet Egg Casserole was a complete winner in my book and could actually be eaten for dinner too.
The casserole is pretty simple. I came up with the idea after having some of my favorite Mexican Machaca, a recipe with some kind of meat and eggs. All I had to do was switch out the meat and use Lightlife’s non-GMO Gimme Lean Meatless Veggie Sausage.
I have to admit that I didn’t miss the traditional ground beef at all, and with so much protein added my waist was even more thankful.
Cooking casseroles is all about building flavor from the very beginning. The onion and garlic are cooked until the onions start to soften and become golden. Add the chipotle, which can be as much as you like but be careful because it can get pretty hot.
For an extra protein boost I added some black beans and then the tomatoes and Gimme Lean Metaless Sausage. Give everything a stir and then plop a couple of fried eggs on top for the perfect finish!
