Trendy foods are always being developed. Some are a novelty and usually more for Instagram but there are some that actually serve a purpose and cheesy chaffles would be in this category!

A chaffle is basically a cheesy waffle, and they couldn't be easier to make with only two ingredients if you make the basic chaffle recipe. All it takes is a combination of egg and grated mozzarella, add it to your waffle iron and you have an easy keto style snack for breakfast or lunch. The basic chaffle though is screaming to be customized so I adapted mine to the classic flavors of caprese.

How to make a caprese chaffle

Begin by making your egg and mozzarella combo and add chopped fresh tomato and fresh chopped basil. I tested lots of chaffles and although the recommended chaffle recipe you can find on the internet asks for one egg and a half cup of mozzarella, I prefer adding more cheese.

I doubled my cheese to one cup and this gave my chaffle a crispier, cheesier texture and taste. The original version was just a little too eggy for me. I also added some almond flour to stiffen up the mixture.

Cooking your chaffle recipe

A simple waffle iron is all you need and don't worry if the batter doesn't fill up the whole waffle plate, it'll spread out when you lower the lid. I cooked my chaffles for at least three minutes to get a nice crispy, cheesy texture but you can pop the lid open and take a peek. If you'd like more color just give it some more time. Another good indicator I found was to watch the steam from the waffle maker. The less steam, the closer your chaffle is to being ready.

Serving your chaffle

Because these are savory, a simple sprinkle of sea salt and black pepper is all that's needed if you want to keep them fully keto friendly. If you can find balsamic syrup that might be keto approved, use it to drizzle over your chaffles for the ultimate caprese touch.

Serve the chaffles as soon as they're cooked, they tend to soften up as they cool down and lose that cheesy crispiness! If you're making multiple chaffles, turn the oven on low and keep the cooked ones on a sheet pan as you continue cooking.

Ingredients

  • 1 large egg
  • 1 cup grated mozzarella cheese
  • 2 tbsp diced tomato
  • 1-2 tbsp chopped basil
  • 1 tbsp almond flour
  • balsamic glaze (optional)

Instructions

  1. Preheat your waffle maker to the correct setting.
  2. In a bowl use a fork to whisk together the egg and mozzarella.
  3. Add the tomato, basil and flour and gently fold through the mixture.
  4. Place the mixture onto the hot waffle maker and place the lid down.
  5. Cook for around three minutes or until as crispy and golden as you like.
  6. Seson with salt and black pepper when done.
  7. Serve at once with extra basil and balsamic glaze if desired.
