It's time for my annual Food Bloggers Cookie Swap post! Every year, a bunch of food bloggers all across the the world bake cookies and send them to three other bloggers. Next, you wait for the mailman to deliver three boxes to you! What could be easier, because who doesn't love cookies?

There is a serious side to the swap. The organizers, Julie and Lindsay designed the cookie swap to benefit Cookies For Kids Cancer. Every blogger who participates in the swap pays a nominal donation fee which is then matched by some really generous sponsors. There's some serious cash being raised and it's all for a fantastic cause.

This year I decided to make these Chocolate Chunk Butter Cookies. Light, full of giant chocolate chunks and dusted with powdered sugar I hoped my cookie partners would be happy with them. I was lucky to receive some great cookies myself, Dark Chocolate Peppermint, Coconut Thumbprints and Fluffernutter Cookies with Bacon did not last very long in my house, they were so good!

Ingredients

  • 1 tablespoon cocoa powder
  • 1 1/2 cups all purpose flour
  • 1 cup unsalted butter (softened)
  • 5 tablespoons sugar
  • 2 teaspoon vanilla extract
  • 2/3 cup chocolate chunks
  • Powdered sugar for dusting on top

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line 2 baking trays with parchment paper
  3. In a bowl whisk together the cocoa powder and flour.
  4. Beat the butter and sugar in the bowl of a stand mixer until light and fluffy.
  5. Add the vanilla and chocolate chunks.
  6. Mix on low speed adding the flour gradually.
  7. Use a small cookie scoop or teaspoon to place the cookies onto the prepared trays.
  8. Bake for 12-15 minutes and golden brown.
  9. Dust with powdered sugar.
