Summer is a great reason for being a lazy bones so why sweat it making a whole meal in a hot kitchen, when you could be outside enjoying the fresh air. Picnics are a great way to add some fun to a weeknight dinner routine, even if it’s just a local park. Check your parks and recreation website first, there’s usually some fun stuff to do through the summer nights. Lately in my neighborhood there’s been concerts in the park and movies on the beach, yeah how cool is that. Nothing screams summer than sitting on the sand watching the big screen.
Finger foods are the way to go, so pick up some charcuterie, fresh fruit and these homemade cheesy custard tarts for an easy feast. These two bite, maybe three bite tarts are best served at room temperature. They’re filled with onion, roasted peppers and Cacique Queso Fresco.
