Remember that leftover corned beef sitting glumly in the fridge? Let’s rescue it from ending up as food waste with these cheesy corned beef pull-apart sliders! Hawaiian sweet bread is really the key to this recipe, with the sweetness perfectly complimenting the salty beef and tangy sauerkraut. You can bash out 12 sliders in as little as 5 minutes, but you better have another batch ready to go because these will go fast. Pull-apart sliders are a crowd pleaser, regardless of what they are stuffed with, but what really takes these up a notch is the glaze. I whisked together melted butter, Dijon mustard, honey, and garlic and gave the buns a good dowsing before baking. Don’t worry about them going soggy, the buns will soak up the butter and become perfectly moist. 

If you can’t find a premixed everything bagel seed topping, you can find my homemade version here, or you can just use poppy seeds. Some other options include throwing in some chopped pickles for an added tangy crunch and subbing out the Swiss for Gruyere or mozzarella, which are lower in fat. You can also use olive oil instead of butter to drop the fat and cholesterol levels substantially.

How do I store corned beef sliders?

These assembled sliders are happiest in the fridge for up to 2 days. Simply cover them tightly with foil or place them in an airtight container for the best storage. That said, these are best consumed right away when they are made.

Can I freeze corned beef sliders?

Freezing and dethawing can result in soggy buns, so we don’t recommend freezing these corned beef sliders. 

What can I serve with corned beef sliders?

Crispy potato chips or french fries are classic partners in crime for sliders. For a healthier twist, offer baked sweet potato fries or a salad. You could also serve them with a light and flavorful soup, like butternut squash or creamy loaded potato soup.

Can I make these ahead of time?

You can assemble them and keep them covered in the fridge for up to 24 hours before baking. Just wait until right before serving to brush with the glaze and bake.

Help! My family hates sauerkraut!

No worries! Swap it for shredded cabbage or caramelized onions, or even skip it altogether and just add more Dijon mustard for tang.

Can you use other ingredients besides corned beef?

You can also use pastrami for a smokier flavor or ditch the meat and opt for a plant-based option like seitan or a vegan beef alternative. You can also swap out the Swiss cheese for a plant-based cheese.

Ingredients

  • 12-pack of Hawaiian slider buns
  • 1 cup sauerkraut
  • 2 tbsp Dijon mustard
  • 6-ounce pack of sliced corned beef or pastrami
  • 8-ounces sliced Swiss cheese

For the butter glaze

  • 2 ounces unsalted butter
  • ½ tbsp Dijon mustard
  • ½ tbsp honey
  • 1 pinch garlic powder
  • 1 tbsp everything bagel seeds or poppy seeds

Ingredient Swaps

  • Use whole-wheat slider buns in place of Hawaiian sweet slider buns for more fiber and nutrients.
  • Opt for a reduced-fat Swiss cheese, or try Gruyere or mozzarella.
  • You could also add some roasted vegetables to this dish, like bell peppers, onions, or zucchini. 
  • Replace the butter glaze with olive oil for a healthier fat option.

Instructions

  1. Preheat the oven to 350°F. Line a 13x9-inch oven-safe dish with parchment paper.
  2. Slice the entire slab of Hawaiian buns in half to create a top and a bottom half.
  3. Place the bottom half into the prepared dish and add the sauerkraut, spreading it out evenly across the buns.
  4. Spread the Dijon evenly over the sauerkraut.
  5. Lay each slice of corned beef onto the buns, followed by the Swiss cheese.
  6. Place the top half of the slider buns on top of the cheese.
  7. Make the glaze by melting the butter and whisking in the Dijon, honey, and garlic powder.
  8. Using a pastry brush, glaze the top of the slider buns with half of the melted butter mixture and then sprinkle the everything bagel seed or poppy seeds on top.
  9. Place in the oven and bake uncovered for 20 minutes. Once the buns come out of the oven, brush again with the remaining melted butter glaze.
  10. Lift the sliders out of the pan using the parchment paper and slice into individual sliders. Serve at once.
