Beets have always been a favorite thing to eat for me. Growing up there would always be a jar of pickled beets in the pantry, my dad put them on everything and I even made beet sandwiches. They tasted great but watching the white bread turn a magical pink color was also really fun!
Now that I’m all grown up, beet salads excite me with feta cheese or balsamic vinegar and maybe a handful of caramelized walnuts thrown on top for some extra crunch. If you’ve ever bought a raw beet at the store, you’ll know it can take a while to cook it. which is fine if you’re looking for that roasted flavor. But with pickled beets, all of the hard work is already done for you, say goodbye to peeling, cooking (and mess) and still retain the flavor and nutrition.
And it’s that nutrition that I wanted to keep when I created this Beet and Spinach Power Smoothie. As well as spinach, I added berries, apple, banana, vanilla yogurt and coconut milk, so you can see it’s bursting with ingredients to get you going in the morning or as I had it, as an energy booster after my workout!
Just add everything to your blender and 20 seconds later you have this amazing and bright pink smoothie. Add straw and drink…repeat!
ingredients needed for a beet and spinach smoothie
- Pickled beets
- Spinach
- Frozen mixed berries
- Banana
- Apple
- Vanilla yogurt
- Coconut milk
how to make a healthy beet smoothie

Drain the juice from the beets and add to your blender.

Add the remaining ingredients to the blender and blend for a few minutes until smooth and lump free.

Pour into a tall glass, add a straw and enjoy!

Beet and Spinach Power Smoothie
Ingredients
- 1 jar Aunt Nellie’s whole pickled beets drained
- 1 cup spinach
- 1 cup frozen mixed berries
- 1 frozen banana
- 1 small red apple cored
- 6 ounces low fat vanilla yogurt
- 1 cup coconut milk
Instructions
- Make sure and drain the juice from the pickled beets.
- Place all of the ingredients into your blender.
- Blend on high speed for about 20-30 seconds and the consistency is smooth.
- Pour into two tall glass tumblers and drink at once.
