It’s been too long since my smoker has been fired up. Between being on vacation and my wife’s doctor telling her to eat less red meat (?), my poor smoker has been on a hiatus in the garage. Today though I moved it back to it’s spot in the yard and filled it with coal. I didn’t have enough time to make a brisket or pork butt so the ribs seemed like the ideal choice.
I rubbed one rack with a Tex Mex spice and the other with some jerk seasoning. Both of them would be mopped with barbecue sauce towards the end of the smoke. The ribs went on the grate at 1pm and I took them off at 5.30pm. Some people can cook ribs in a couple of hours but I still prefer to go low and slow. The end result was a juicy rib which came off the bone with ease. The Tex Mex rack was the winner in my opinion. The jerk rub smelled great but It didn’t blow my socks of. A picnic in the park is planned for tomorrow so I will probably shred the leftovers and make some cool little sandwiches.
