It would be unfair to these Avocado Stuffed Mushrooms if I didn’t say the number one thing you will love about this recipe is the avocado.  It’s honestly one of the few perfect foods on the planet. 

Filled with nutritional value…you may have heard of “the good fats”...and just the perfect creamy flavor that adds so much to any recipe.  It’s one of my favorite ingredients and transforms these mushrooms into an amazing dish.

Ingredients You’ll Need - Quick Snapshot

Here are the ingredients you will need (see quantities below):

  • Avocado - The foundation of the recipe, along with…
  • Mushrooms - We used whole button mushrooms because they are so easy to fill
  • Garlic - Adds a bold flavor to the dish
  • Black Olives - Brings a little sweet and fruity tone
  • Calabrian Chili Paste - We have to add a little kick to the dish
  • Salt/Pepper - To taste
  • Parsley - It just looks fancier with little dry parsley flakes to finish the plate

The Process

Start by gathering all of your ingredients.  This one doesn’t take a lot of prep work at all.

Wash the mushrooms and remove the stems while they are drying.

Place all ingredients, except the mushrooms, in a bowl.

Mix the ingredients until the avocado is smooth.

Once the mushrooms are dry, flip them open side up to prepare for the avocado mixture.

Fill the mushrooms with the avocado mixture.

Cook at 400 degrees for 10-12 minutes.  Top with some additional sprinkles of salt and parsley.

Avocados also contain significant amounts of vitamin K, vitamin C, vitamin E, vitamin B6, folate, and magnesium, all of which play important roles in various bodily functions, including immune function and energy production.

The unique combination of nutrients found in avocados is beneficial for maintaining healthy skin, too! The monounsaturated fats in avocados help keep the skin moisturized and supple, reducing dryness and promoting a youthful appearance (who doesn’t want that?).

Ingredients

  • 1 avocado
  • 1 8 oz package of whole white mushrooms
  • 1/2 tsp minced garlic
  • 1 tsp chopped black olives
  • 1/2 tbsp. Calabrian chili paste
  • pinch of salt
  • pinch of pepper
  • 1/2 tsp dried parsley

Ingredient Swaps

Instructions

  1. Preheat oven to 400 degrees
  2. Remove mushrooms from package
  3. Remove mushroom stems (you can use your fingers to just wiggle the stem out, or I find it easy to use a spoon to carefully work your way around the base of the stem and then scoop it out)
  4. Wash mushrooms and set upside down on a paper towel to dry
  5. In a small bowl, place the single avocado, ½ teaspoon of minced garlic, 1 teaspoon of chopped black olives, ½ tablespoon of calabrian chili paste, pinch of salt and pepper
  6. Mix until avocado is a smooth consistency
  7. Place the mushrooms open side facing up and fill each with about a spoonful of the avocado mixture (I had more than enough to fill a dozen mushrooms)
  8. Place on a cookie sheet and bake for 10-12 minutes
  9. Let sit for a minute after removing from the oven
  10. Place the mushrooms on a plate and sprinkle with a little more salt and dried parsley
