Hi, and thanks for dropping by Foodness Gracious.
I started my blog when I became a stay-at-home dad to my two amazing kids. They can be my biggest critics, but usually they love what they get to eat in the kitchen (if they don’t, then tough luck – I’m the boss). My background mostly involves desserts and pastry, but alas, we can’t just eat that every day so I do cook “regular” food also. To me, food shouldn’t be like rocket science – it should be simple, fresh and easy to prepare. I love spicy dishes and would secretly like to challenge Adam Richman of Man vs Food to a hot throw down. Bring it Adam!
I grew up in Scotland and have been living in the United States for 12 years. I do still yearn for some foods from back home – haggis being one – but with so many different cultures and foods here in the Los Angeles area, I feel a wee bit spoiled for choice.
My biggest piece of advice is this: just don’t sweat it in the kitchen, and I don’t mean the heat. I mean stay organized, grab a good recipe book and enjoy the smells and tastes of the food YOU are preparing. You’ll love the satisfaction of eating something that was made by your own hands.
Five Things About Me
- I drink coffee, every day…probably too much, but whatever.
- I must have a piece of every food on my plate on my fork at the same time.
- My favorite breakfast is simply a bacon and egg sandwich.
- My dream is to win the lottery and spend a weekend at a Barrett Jackson auto auction.
- I have my own artisan caramel business. You can check it out at www.tootsweetcaramels.com.
Frequently Asked Questions
Why do you blog?
I started blogging never knowing how much I would actually enjoy it. The challenge is the biggest draw for me, like trying to make certain foods work with each other. Sometimes it works and other times…not so well.
What’s your favorite post?
It would probably be this buttermilk fried chicken and waffles. I love sweet and savory together and the syrup with the chicken is a winner.
Do your kids eat every dish you cook?
They eat almost every dish, but I also know what they will and won’t eat. I can’t make anything too spicy which is a bummer for me. I love the heat! We also have a rule in the house. You must try at least three bites before saying you really don’t like it.
Restaurant or food truck?
I love the idea of moving from place to place.
Which chef would you like to cook dinner with?
Tyler Florence. He just seems so damn nice and approachable. Giada De Laurentis would be pretty awesome too!
What camera do you use?
A Canon 6D with a 100mm macro lens
I love it like a third child.
What do you like to do when you’re not in the kitchen?
Honestly, I like to hang out with my family. If they really don’t want to hang with me then I guess a mountain bike ride or some quiet time to read a magazine with a glass of wine.
You’re floating on a raft in the middle of the ocean. What one food item would you yearn for?
Some Scottish fish ‘n’ chips and a beer. I know that’s two things but they go hand in hand.
What’s a Scottish guy doing in Southern California?
My wife is from California, and we met in a pub in Dublin, Ireland. Things happened, stars went pop and the moon was bright. That was two kids and 15 years ago.
Dreams for the future?
I’d love to own a bed and breakfast somewhere on the central coast, maybe with a small vineyard. That would be a great way to grow old and retire.
